Gravy Recipe


For kofte preparation –

Ingredients:

  • Loki/Gheeya (kadukas kiya hua)       – 1 large size
  • Besan                                                       – half bowl
  • Hari mirch(barik kate)                        – 1 Teaspoon
  • Adrak( kadukas kiya hua)                   – 1 Teaspoon
  • Lal mirch powder                                 – 1 Teaspoon
  • Haldi                                                       – 1/2 Teaspoon
  • Namak                                                    – 1 teaspoon/as per ur taste
  • Khana soda                                           – 1 chutki

For Gravy

  • Jeera                                                      – 2 Teaspoon
  • Hing                                                       – 1/2 Teaspoon
  • Adrak (ghisa hua)                               – 1 Tablespoon
  • Hari mirch(barik kate)                      – 1 Teaspoon
  • Pyaz(optional) (kadukas kiya hua) – 2 Medium size
  • Tamatar(kadukas kiya hua)             – 4 Medium size
  • Lal mirch powder                               – 1 Teaspoon
  • Dhaniya powder                                 – 3 Teaspoon
  • Haldi                                                     – 1 Teaspoon
  • Garam masala                                     – 1 Tablespoon
  • Namak                                                  – 1/2 Teaspoon/as per ur taste
  • Oil                                                          – for deep fry 

Method:

  • Sabse phle loki ko dho kar usko chil kar chilka utarle.
  • Chelne ke baad loki ko kadukas karke usko hath se press karke uska extra pani nikal le aur nikle hue pani ko bowl mei gravy mei dalne ke liye alag rakh le.
  •  Kadukas ki hue loki mei besan, pyaz(hathse halka press krke pani nikle hue),barik kate hari mirch,kadukas kiya hua adrak,lal mirch powder,haldi powder,ek chutki khana soda,namak dal kar ache se mix karle.
  • Ek kadai mei 3-4 tablespoon oil garam karle,ab loki besan ke tayar ghol ka thoda-thoda portion lekar garam oil mei dhere sedale aur medium flam par golden brown hone tak tale.
  • Aise he baki bache hue ghol ke kofte tayar karle,dhiyan rahe last mei 2-3 tablespoon ghol gravy mei dalne ke liye bacha le.
  • Gravy tayar karne ki liye ek kadai mei oil garam karke usme jeera dale jab vo chatne lage to ghisa hua adrak,barik kate hari mirch dale,fer pise hue pyaz dalkar light brown hone tak bhune.
  • Pyaz bhunne ke baad kadukas kiye hue tamatar dale aur bhune.
  • Tamatar bhunne ke baad lal mirch powder,haldi,dhaniya powder,garam masala powder 2-3 tablespoon pani  dalkar ache se chalaye.
  • Jab gravy kadai ke sides mei oil chodne lage tab esme khise hue loki ka bacha hua pani, kofte ka bacha hua ghol,3 bowl pani dale aur ache se mix kare.
  • Ab ek ubal aane par esme tayar kofte,namak daale aur low flame par 10-15 min dhak kar pakaye.
  • Tayar loki ke garma-garam kofto ko hare dhaniye se garnish karke Roti/Rice ke sath serve kare.

TIPS:

  • Kofte banate time loki aur besan ka ghol na jyada patla hona chahaye na jayada gada,eski sahi consistence ke liye uper diye hue video link par click kare.
  • Kofte dalne ke baad gravy agar gade ho jaye to usme thoda pani aur add karke 2-3 min tak pakale.
  • loki ke Kofte thande hone ke baad pani ko absorb karlete hai esliye pani ki consistence ko serve karne se phle theek karle.
  • Aap es sabji ko bina pyaz dale bhi bana sakti hai,ye bina pyaz dale bhi swadist lagte hai.

Hello,phle to aap mujhe ye batayen ki kofte tel mei dalne par fat rahe the ya koi aur wajah the sahi na banne ki,kyuki agr kofte fat rahe the to ho sakta hai kofto ke ghol mei besan ki matra kam rah gayi hogi,agr kofte tel mei dalne par fat rahe hai to usme besan ki matra thodi aur bada kar ek kofta tal kar dekhen agr sahi se tal jata hai to baki ke bhi aise he banayen.
